La consciencia gastronómica is a Spanish 4+ CI curriculum unit from the Huellas 2 curriculum sequence designed to build proficiency through global issues, social responsibility, and meaningful comprehensible input. In this 12‑day unit, students explore food insecurity, food deserts, and food waste through the work of Chef José Andrés, examining how access to food connects to equity, disaster response, and human dignity.
This proficiency‑based Spanish 4+ curriculum unit supports interpretive, interpersonal, and presentational communication as students engage with infographics, readings, media, and discussion centered on real‑world challenges and solutions. Students develop the language needed to explain systemic issues, analyze causes and effects, and reflect on how individuals and organizations can create change. By learning about José Andrés and World Central Kitchen, students see how food can be a powerful tool for humanitarian action.
La consciencia gastronómica can be used as a stand‑alone Spanish 4+ thematic unit or as the culminating unit of the full Huellas 2 curriculum sequence, making it a strong capstone experience for advanced learners.

Love this take on talking about food. Very engaging and well-organized unit.

My students really enjoyed this unit, especially since WCK is the charity that our language honor society has chosen to support. The email assessment was fantastic; not only does it prepare students for free response on the AP exam, but it really lets students show what they learned in the unit. I highly recommend!

I love love love this unit!!! I supplemented the terrible resources provided by my district on gastronomy and healthy lifestyles with this unit. I love the amount of choice in the number of resources as well as the authentic materials that are appropriate for an intermediate learner. I like how it engages students on a heavy topic with a positive outlook.

I added this to my "heroes" unit in Spanish 2. I'm recommending other teachers in my department purchase for the next year to add Jose Andres to theirs, too.
